Il "Cason" nasce come rifugio dei pescatori che uscivano in mare o nella vicina laguna,e il cason era luogo dove ripararsi dalla pioggia e preparare e alloggiare le reti da pesca.All'interno c'era sempre spazio per una grande griglia dove pesce e polenta erano sempre pronti a deliziare i palati dei suoi ospiti.E' una struttura in legno e canne palustri,a soffitto molto alto, prettamente tipica dei territori di mare,e di laguna,dove non solo pescatori, ma anche cacciatori trovavano posto,uno dei più famosi della nostra zona è stato Ernest Hemingway, che ne ha ampiamente raccontato anche nei suoi famosissimi romanzi,noto anche come una buona forchetta.
