Detailed description is Homemade Gluten Free baked goods....
All baked goods made with Gluten Free baking flour or a combination of gluten free flours & starches.
In May of 2011, our 7 year old son had started getting very sick, normally after breakfast.
This had started worrying me, as this was starting to happen almost every single day.
He was in the 1st grade, and on his very last day of school, it happened again.
I thought he had the flu, so I didn't send him, but at the same time, I was worried, so I called our pediatrician.
Ruben had blood tests done, and the results were not what I wanted to hear.
He had lost almost 3 pounds within the last year (which is VERY unusual for children as they typically GAIN weight).
This added to the doctor's concern that he had Celiac Disease.
He ordered that we have an endoscopy done.
So within 2 months, we were on our way to Iowa City.
Waiting for those 2 months to fly by was horrendous.
We had to keep Ruben on the same diet, and he continued getting sick and it was VERY hard to witness.
But to get correct results, we needed his stomach to continue to be "damaged".

He was the bravest child I have ever met....it took 3 different nurses and 6 needle pokes to finally get the IV inserted, and he didn't shed one single tear! His mother however, was a bawling mess...to stand back and witness my child having to go through all this pain was the hardest thing I had to witness at this point.
But, the nurses and staff at the Children's Hospital in Iowa City were FANTASTIC!! .
20 minutes later, we had results and they were scary.
Ruben had Celiac's Disease, and only because I researched this disease online, I knew what we were dealing with.
But I was still very worried.
He basically had NO villa (Definition: Microscopic finger-like projections that line the inner wall of the small intestine.
(Singular: villus.) After food passes from the stomach into the small intestine, nutrients in the food are absorbed into the body through the villi.
Every person has millions of villi in his intestines) left in his small intestine.
To see the pictures of his stomach lining was strange too.
But I was so thankful that we were being told what needed to be done.
Finally we had answers to why our little man was getting sick!!.
So, Ruben has been on a gluten-free diet since finding out in July what he had.
He has adjusted so well to the diet too, and I'm so grateful for that.
We believe he remembers getting sick and the feeling he had when it was happening, and that's why he adjusted so well.
We've had a couple times where he was contaminated with gluten filled food, and he has gotten sick, but only a couple times.
Going out to eat is impossible for us, unless we know the restaurant serves gluten free, and we have run into one that offers gluten free, but is NOT...we no longer go to this chain of restaurants.

One thing I have found out is the food is not as hard to come by and I thought it would be when this was first put onto our plate.
We have bought goodies for our son before, but after digging in and baking things (I LOVE to bake, by the way) and realizing this is something I can do and make it taste better than the store bought foods, we no longer do that.

He will never be very tall nor will he have much meat on his bones, but he is HEALTHY!!
