Detailed description is Restaurant français Le Temps des Cerises ouvre pour la première fois ses portes en 1976, au 18-20 de la rue de la Butte aux Cailles, dans les locaux d'une ancienne épicerie.
Dès le départ il s'agit de créer un lieu convivial.
Pour faire vivre cette idée les fondateurs font un choix d'organisation décisif : La Société Coopérative Ouvrière de Production ( S.C.O.P ).
Ce choix comme celui du nom du restaurant Le Temps des Cerises, en hommage à la Commune de 1871, s'inscrit dans l'histoire ouvrière, populaire de Paris .
Aujourd'hui l'usine Panhard a fermé ainsi que les nombreux ateliers d'imprimeurs dont les ouvriers venaient se restaurer au " Temps des Cerises ", mais le choix de la Coopérative demeure .
Un homme, une voix, pas de patron, juste repartition des bénéfices , amelioration de l'outil de travail, interdiction de la plus-value sur la revente du fond de commerce, ces principes sont encore marginaux en France meme si de nombreuses coopératives existent dans des secteurs très différents ( ex: Les Cheques Dejeuner, le mensuel Alternatives Economiques, Le Théatre du Soleil .
