Il travaille successivement comme Sous-Chef à l'hôtel restaurant Aquitania 4 étoiles durant 3 ans, puis comme Chef de cuisine au restaurant les confréries dans le quartier des Chratrons.
C'est en 1999, qu'il décide de revenir sur l'île de Ré pour se mettre à son compte.
Il achète un salon de thé crêperie à loix qu'il transforme au cours des années en Brasserie - Crêperie - Terrasse pour en faire un lieux unique dont on connait aujourd'hui la réputation!
