I have a shelf full of about two dozen cookbooks, most of them vegan, and yours is the one I consider most reliable.
I like the fact that you think more about nutrition than a typical cookbook author does, meaning I can think about it less just by choosing your recipes.
Your directions are also very time-efficient, not throwing in unnecessary pan changes when the old one can simply be deglazed.
Your rosemary tofu saute (loved by vegan and non-vegan relatives alike), coconut lentils, and cashew french toast are now staples in our home..

The information is presented well and easy to read although it can be a shock to your food regime.
