Detailed description is Chef Biography Robert Kalama Ah Quin IV.
Born and raised on the Eastern Shores of Waimanalo in Oahu, Hawaii..
Graduating from Kailua High and enlisting in the US Army Infantry at 17 years old.
Served as an active duty infantryman for 10 years, while deployed overseas for most of my service time.
Relocated to Atlanta to start a career in the Food and Beverage World.
Bartending and cooking at Buffalo’s Southwest Café started it all out.
Moving on to the Crowne Plaza and working both the Banquets and Outlets departments.
While here I attended Culinary school and served as Chef for “The Wave”, first Hawaiian restaurant in Atlanta.
Trying to get a feel for another part of the business I moved over to Publix and eventually the Country Club system.
For the past few years I have been a Corporate Chef with my catering business “Kalama’s Kuisine” on the side..
My Mother’s side of the Ohana is of Hawaiian, Japanese and Chinese decent.
As a child mom always cooked Asian foods; Japanese, Chinese and Korean dishes were of abundance.
Kalbi being her favorite dish to cook and serve.
My Father is of Hawaiian and German decent, yes a crazy mix.
He loves some Liverwurst, but I don’t.
Although I have grown to love some German food since I was stationed there for over 5 years..
Growing up in Hawaii allows us to sample some of the food from all around the world, especially Asia.
All kids start eating raw fish at the age of 1, and then it’s all downhill; Hawaiian, Filipino, Japanese, Chinese, Korean, Vietnamese, Thai, Indonesian and even Portuguese food.
Seafood was the center of attention for all meals as far back as I can remember.
From Raw Ahi to Eel, and even Sea Cucumber was a delicacy to eat.
Growing up with such a large family introduced me to a wide variety of Kuisine’s.
Every luau was spent sampling a dish from a distant land, like Blood Rice from the Philippine’s or Kim Chee soup from Korea.
Our taste buds were always left wanting more and willing to try something more exotic or tropical..
Living in Georgia and working in and around the Food and Beverage Industry has allowed me to work with different Kuisine’s and try to fuse them together somehow (try my Kalua Pig stuffed Collard Green Rolls).
I’ve worked with Southern, Cajun, Italian, Southwestern/Tex-Mex, Modern American, Asian and Classical French Kuisine throughout my career, and am looking for ways to blend all these influences.
A great example is taking a Chinese Sweet Bun (Bao) and stuffing it with Spicy Korean Pork (Daeji Bulgogi).
Have you ever tried Spam Benedict with Wasabi Hollandaise? .
My dream would be to own a restaurant that I can serve a fusion of all these Kuisine’s.
I’ve also learned a great deal of Wine and Spirits, and could easily put together a wine tasting menu.

In my spare time I like to be outdoors playing sports, hiking, paddling, surfing or anything near a beach.
I have a small home gym that I like to hit the weights and work the punching bag.
Jiu jitsu was a big part of my workouts from 2003-2009, achieving a purple belt.
Recently, softball, flag football and kickball has been a past time.
Although I have always loved golf and play as much as possible (even though I still shoot in the high 80’s after playing for 6 years)..
My number one guilty pleasure is sweets.
Ranging from Cake, Candies, Chocolate anything, pie, pastries.
You name the sweet, and I like it! On many of occasions I have uttered the words, “I LOVE CAKE” so loud that I’ve gotten the weirdest looks from folks around me.
But, who doesn’t love cake?.

I am hoping the food I have to offer will be well received and liked by everyone who consumes it.
There’s no better feeling than someone smiling over some edible they just had.
That picture is what I strive to see out of every dish I serve.
