Detailed description is Hertog Jan is een restaurant, van 2005 tot begin 2014 in Sint-Michiels, een deelgemeente van de Belgische stad Brugge en vanaf juli 2014 in Loppem, een deelgemeente van Zedelgem.
Het restaurant, dat eigendom is van chef-kok Gert De Mangeleer en maître-sommelier Joachim Boudens, heeft drie Michelinsterren.GeschiedenisIn 1992 werd Hertog Jan langs de Torhoutsesteenweg geopend door Guido Francque, het toenmalige concept was een brasserie, waar eenvoudige gerechten werden geserveerd, maar met een bijzondere wijnkaart.
Met uitzondering van een paar onbekende Franse flessen, stonden er enkel nieuwe wereldwijnen op.
In 2002 begon de verbouwing van het restaurant.
Gert De Mangeleer en Joachim Boudens werden aangeworven.
In 2005 namen De Mangeleer en Boudens de zaak van Francque over.
De nieuwe eigenaars investeerden in een nieuw interieur dat zij beter vonden passen bij de moderne kookstijl van het restaurant.ErkenningenDe Mangeleer verwierf de Gouden Garde in de Knack Restaurantgids 2005-2006 als Meest Inventieve Kok.
Sommelier Joachim Boudens werd in 2004-2005 bekroond als de beste sommelier van België en Sommelier of the year 2011.In de Michelingids voor 2007 kreeg het restaurant een eerste Michelinster, in die voor 2010 een tweede ster en in die voor 2012 een derde, wat van Hertog Jan voor die tijd één van de drie Belgische driesterrenrestaurants maakte, naast De Karmeliet en het Hof van Cleve.
