309 Cultures features Peoria-made probiotic kraut and kimchi

PEORIA – Joe Zich is building on the Whiskey City’s long history of commerce through fermentation in a unique way.  Zich – the owner of 309 Cultures – makes sauerkraut and kimchi, products that are naturally preserved through fermentation. But instead of causing intoxication, this type of fermentation is considered healthful.  “These little bacteria go into our gut microbiome, which is kind of our core for all of our microbes, and it’s kind of like sending in a bunch of good guys,” said Zick. “It’s like putting a bunch of good workers in there. Keeping the good and bad balanced in there helps keep about everything balanced in our bodies.”
