In 2010, while working at an Italian restaurant and pastry shop in Australia, chef Manny Ferraiuolo met fellow pizzamaker Giuseppe Santoro.
Five years later, Santoro became president of the Federation of Italian Pizzaioli, a non-profit organization formed in 2003 to increase knowledge of Italian food, not least pizza, among cooks worldwide. Ferraiuolo moved to the U.S.
The association paid off: Ferraiuolo’s restaurant, Manny’s Cucina Napoletana in Melbourne, has been selected as FIP’s delegate here and he wants to put it to good use by introducing training for culinary workers during the current hiring crisis.
The pizza class will be available in early May, Ferraiuolo said.
