When standing on a concourse at The Ion, the 266,000-square-foot building rising above city lots as the first step of many in creating a 16-acre Midtown Houston innovation district, it s easy to imagine all the activity that s expected in the future. Look up, and Microsoft workers might scramble from one doorway to another. Entrepreneurs and makers from places like TX/RX Labs may converse over coffee while sitting at concourse table, while down on the ground floor, a NASA official might be conducting a keynote speech. In other rooms and open spaces tucked along the perimeter of the building, you could find workshops, team meetings, and what folks in the innovation sector call collisions, or random conversations between people that possibly lead to professional collaboration.

Despite enormous hardship in the travel industry, exceptional properties have continued to open across the globe (nearly a thousand last year in the U.S. alone). As always with this endeavor, each of the 69 picks on this year’s list was safely vetted by our international network of correspondents.  But as we’ve learned in the past year, everything is connected, which is why we’ve also expanded the scope of hot to include restaurants, transportation, and destinations, as well as more news we’re excited about set for later this year. In spite of it all, these new restaurants are a success story all their own. We think they’re a pretty great way to mark the 25th anniversary of this list.

Houston s Favorite Father-Son Duo Is Back with a Midtown Bar and Restaurant

The Cordúa family is back, and in a big way. This fall, David and father, Michael Cordúa, will open The Lymbar, a cocktail bar and restaurant, at The Ion, the Midtown structure set to anchor the neighborhood s 16-acre innovation district. The restaurant pays tribute to the family s home on Lymbar Drive in Westbury. The Cordúas have been one of Houston s first names in Latin American cuisine, creating concepts like Churrascos, Américas, Artista, and Amazón Grill over a 30-year run. The father and son left Cordúa Restaurants in 2018, and The Lymbar marks their first major move since departing.

Courtesy of Gin Design Group David Cordúa is returning to the kitchen. The chef and restauranteur will open The Lymbar at The Ion, Rice University s innovation-focused mixed-use development in Midtown. Slated to open this fall, the Lymbar will occupy The Ion s jewel-box corner suite. Described as a bar forward, small plates concepts devoted to both Latin and Mediterranean flavors, the 120-seat restaurant will feature meats prepared on a vertical roaster that will be visible from an open kitchen. Gin Braverman of Houston s Gin Design Group (Axelard, Eunice) will design the restaurant.
