The food in Lanzarote is a melting pot of delicious gastronomy that is partly Spanish but uniquely Canary Islands. Culinary influences draw on the cactus and palms of Africa, chilli and potatoes introduced from South America, seafood and tapas of modern day Spain and the spicy flavours brought by merchant ships passing through the Canaries. Homely soups and stews are rooted in the resourceful peasant farming of an island that has very little water. But the real bounty comes from the sea, with an amazing array of fresh fish and seafood.
