The trio had become disillusioned with commercially made Cornish pasties. On a mission to bring more authenticity to the market and armed with their own unique recipe, handed down through the generations, they started out with a handful of family members making just 100 pasties a day from their kitchen table.

It was developed with a customer, who owns a toastie business, looking for a loaf that was soft and even in size, but with the benefits of sourdough. The loaf is made using a yeasted white sourdough sponge with a little bit of rye. Seasons adds 0.2g of yeast to its sponge as well. Having been fermented in the fridge for 24 hours, the sponge is added to Seasons’ sourdough, bulk fermented for six hours, divided, moulded and put into tins. There it is left to slowly proof for six hours before baking.
