Six by Nicol has enlisted the help of award-winning cheesemonger Stephen Sweet for its latest venture The Glasgow restaurant chain Six by Nico is to launch a pop-up cheese shop in the city s west end ahead of a new venture on the same site. The firm, which has restaurants world-wide, will open The Cheese Club at the site of the former Fopp record shop on Byres Road. The company announced last week that is to open a new restaurant on the premises with a rooftop bar. Ahead of this, the new pop-up will open at the end of March. Award-winning cheesemonger Stephen Sweet will lead the pop-up store s day-to-day operations as well as curating The Cheese Club shops products and online distribution services with HOME-X.
