The Houston restaurant group behind Georgia James, UB Preserv, One Fifth, Hay Merchant and Blacksmith on Wednesday announced two new concepts.
Underbelly Hospitality from James Beard Award-winning chef Chris Shepherd is set to open Wild Oats restaurant in summer 2021 and Georgia James Tavern in spring/early summer 2021.
Wild Oats
Wild Oats, a full-service restaurant at Houston Farmers Market at 2520 Airline Dr., shines the spotlight on Texas cuisine by Houston native Nick Fine.
Dishes, made with locally sourced ingredients, include a house take on shrimp diablo featuring masa in a nod to tamales.

Torchy’s Tacos has introduced its January Taco of the Month, the Fancy Schmancy, a perfect brunch taco made with hot smoked salmon, scrambled eggs, fresh spinach, capers, pickled onions and jalapenos, fresh dill and herb cream cheese on a flour tortilla. Get it for $6.50 and pair it with $3.50 mimosas all month long.

Underbelly Hospitality culinary director Nick Fine will teach kids of all ages to cook in UH’s next installment of Virtual Cooking for Kids: “Cloudy with a Chance of Meatballs.” The $55 kit serves four and includes all the ingredients to prepare veggies and ranch, garlic bread, pasta and meatballs, and cannoli. Pick up your kit on January 16 between noon and 5 p.m. at 1100 Westheimer.

Underbelly announced on Wednesday that Wild Oats will open at the Houston Farmers Market, the property being redeveloped by MLB Partners at 2520 Airline Dr. The company is handing the keys to this place over to Nick Fine, UB Hospitality s culinary director, who also opened One Fifth as its chef de cuisine.

Underbelly Hospitality will open at least two new restaurants in 2021. The company has announced more details on the restaurant chef Nick Fine will open at The Houston Farmers Market and revealed a new casual concept for one of downtown’s most luxurious high-rises.
Georgia James Tavern will open in Market Square Tower later this year in the former Coterie space. Pitched as a more casual, less expensive offshoot of Shepherd’s luxurious Georgia James steakhouse, the Tavern will serve salads, sandwiches, and burgers along with Georgia James’ signature cast iron-seared steaks and dishes cooked in a wood-burning oven.

As he learned on Tuesday that Senate Majority Leader Mitch McConnell had blocked a proposal to provide $2,000 in direct pandemic-relief, James Beard award-winning chef Chris Shepherd’s first thought was for hospitality workers who “are going to get crushed.”
The $600 that was included in the Coronavirus Relief Package is “not even close” to what many of these workers need, Shepherd says. “That’s sad.”
Shepherd, executive chef and owner of the restaurant group Underbelly Hospitality in Houston, has been doing what he can for all types of workers in the food and beverage industry suffering as a result of Covid-19 through his foundation, Southern Smoke.
