Rodent activity, solidified grease: York County restaurant inspections

The following York County restaurants were found to have violated Pennsylvania’s health and safety regulations during inspections between Feb. 7-13.
Inspections are overseen by the Department of Agriculture. The department notes that in many cases violations are corrected by the restaurant before inspectors leave.
PRETZEL PIZZA CAFE & CREAMERY Plumbing system not maintained in good repair - observed faucet leaking at the three-compartment sink. Gasket on two-door refrigerator observed to be repaired using duct tape, not a smooth and easily cleanable surface.
LOUIE LOUIE SEAFOOD
Date: Feb. 11, 2021 Crushed ice observed in the hand-wash sink, indicating uses other than hand-washing.

But I enjoyed seeing the original whilst walking through the back streets of Finsbury Park recently.
I was surprised not to see this already on HoL. Maybe I used the wrong search terms (in which case sorry for wasting your time), or maybe the totalitarian restrictions on our liberties simply mean few others have seen this yet.
For more detail I have found a reference on the internet with a nod to local folklore.
One of the artists is described as working in mosaic which this piece is not. It seems more to me in the tradition of the butcher s shop where the tiles on the wall set out cuts of meat, especially the annotation in the roots of the scientific names.

Violations: Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability available for inspectors review as required.

Violations: Observed wall underneath three compartment sink has a hole, or is broken and in need of repair.

The following York County restaurants were found to have violated Pennsylvania’s health and safety regulations during inspections between Jan. 17-23.
Inspections are overseen by the Department of Agriculture. The department notes that in many cases violations are corrected by the restaurant before inspectors leave.
KENTUCKY FRIED CHICKEN Observed deep fryers and casters heavily encrusted with grease and old food accumulation. Observed cooking and holding equipment, in deep fryer area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. The quaternary ammonia concentration in the sanitizing solution of the three wiping cloth buckets was less than 50 ppm, rather than the target 200 ppm as stated on the manufacturers use directions.
