The first in a series of new cask finish products from Bushmills Irish Whiskey that will be known as the Bushmills Original Cask Finish range, the Caribbean Rum Cask Finish was unveiled last week across the island of Ireland, and then on to whiskey markets across the world. Bushmills’ describes the Cask Finish as their “award-winning single malt used in Bushmills Original Irish Whiskey, finished in hand-selected fine oak Caribbean Rum casks.” It’s then blended with the brand’s triple-distilled Irish grain whiskey to create tropical fruit and dry spice flavors.

Bushmills is embarking on a new range of innovative whiskeys with the first in the series, Caribbean Rum Cask Finish, set to hit shop shelves on April 15. The new launch features a blend of the award-winning single malt used in Bushmills Original Irish Whiskey, finished in hand-selected fine oak Caribbean Rum casks to create tropical fruit and dry spice flavours, with its signature triple distilled Irish grain whiskey. The casks, first used in the Caribbean to hold rich rum for a minimum of seven years, have been carefully selected by local rum makers and transported to Ireland. They are then stored for years in Bushmills’ warehouses, imbuing its single malt with pineapple sweetness, caramelised brown sugar notes, toffee tones and a long, smooth finish.

In the case of Boulard V.S.O.P Rye Cask Finish, a double-distilled Calvados Pays d’Auge (a brandy made from both apple and pears) is first aged in oak casks before further maturation in American rye whiskey casks. The spirit was released in fall 2020 to the tune of just 2,000 bottles. Its nose features caramel apples and maple syrup, as well as sweet, freshly pressed apple cider, cinnamon, and mulling spices. The first flavors on the palate are of caramel-dipped green apples, maple syrup, and dried apricots. It is medium in body, but feels round and rich on the palate.
