More Sauce, Please!

More Sauce, Please! May 7, 2021 I think I am having a sauce moment with our newest recipes. First, there was the guasacaca sauce from Yewande Komolafe’s recipe that I wrote about last week. Last night, I made Eric Kim’s new recipe for chicken with fish-sauce butter, which is below. Then there is Hetty McKinnon’s tahini sauce with her roasted carrot salad, also below. All of the above can be paired with chicken, tofu, grains, fish, vegetables, eggs and/or steak. This is a meal format I love protein plus sauce remarkably flexible in every way, and a gift to cooks who just want to make something easy, then douse it with flavor. A lot more sauces are coming your way from New York Times Cooking this summer. Get excited!

Montclair Board of Ed: Investigation into Discrimination Allegations Pending, Special Ed Audit Recommends Systemic Changes

May 7, 2021 at 11:02 AM MONTCLAIR, NJ - Members of the community demanded the Board of Education (BOE) conduct a thorough investigation into mistreatment allegations described in a letter from Supervisor of Buildings and Grounds Robert Kelley in Wednesday’s BOE meeting.  The letter refers to a “years-long pattern of ‘employee discrimination and criminal sabotage’,” some of which occurred just before elementary schools opened for hybrid learning. One individual stated during public comment that the community received Kelley’s letter via a post in Secret Montclair, a private Facebook group for Montclair residents. It has since been removed. “I’m aware of our complaint that we received,” Superintendent Dr. Jonathan Ponds started off his superintendent’s statement. “We’re investigating the complaint [.] We are following all processes and guidelines.”

What to Cook This Week

What to Cook This Week A bit of dinner-duty improvisation led to this sheet-pan bibimbap.Credit.Linda Xiao for The New York Times Food Stylist: Judy Kim. May 2, 2021, 10:30 a.m. ET Good morning. Eric Kim has a lovely story in The Times about moving home to Atlanta to live with his mother during the pandemic, and how they cooked together and what he learned: an inheritance of kimchi and jjigaes. The lessons went both ways. When Eric’s mom tasted his sheet-pan bibimbap (above), she told him, “I’m never doing it the other way again.” That’s reason enough to try the dish for dinner tonight, I think, though it could wait until a weeknight and you could make Jean Kim’s kimchi jjigae with ribs instead, following her lead to blanch the ribs with ginger first, and to bloom the fiery gochugaru in butter. It’s an extraordinary stew. Cook’s choice but make one of them! This is, Eric channels Nigella Lawson to say, proper home food.
