“We are nervous and excited about re-opening,” Lin said. The Chinese chef was trained in Shanghai and has been in New Zealand for almost three years. “I am very excited,’’ He said through Lin translating. “All the dishes are good on the menu. I particularly like the stewed pork belly and beef with black pepper.” It took three months for his visa transfer between jobs to be approved which put Lin and Wen on tenterhooks. “We decided if it was declined we would just walk out. We are lucky to have him.”
