'America the Beautiful' initiative supports outdoor rec, conservation plans here

San Antonio-born chef Joe Saenz is ready to get back to the business of butchering. The chef, founder and head butcher of Swine House, a purveyor of sustainably raised meat, will next week resume in-person butchering workshops after a year-long hiatus. The May 18 event will consist of a first-hand look at the process of breaking down an entire animal, led by a pro. A native San Antonian, Saenz spent nine years in New York City’s bustling restaurant and food-retail industry before returning to his hometown to introduce the ideas of righteous farming and craft

In loving memory of Patricia “Patsy” Daniel Williams. Patsy lived life loving God, loving family, loving friends, loving strangers, all sadly left behind.  Her spirit is carried on by her family and all the friends she made during her life. Patsy was born to Benjamin Luna Daniel and Trinidad Ramirez Daniel on March 18, 1953, in Houston, Texas. Patsy’s loving husband Ron, and sons Sean and Mark, were with her when she went to be with her Lord and Savior Jesus Christ on March 27, 2021, in Phoenix, Arizona, at the age of 68. Patsy was a devoted wife, mother, grandmother, and loving friend to many.  She was preceded in death by her father, Benjamin Luna Daniel. Patsy is survived by her loving husband and high school sweetheart, Ron Williams of Canyon Lake; son, Sean Williams and wife, Dr. Beth Little, grandson, Benjamin “Benny” Sol Williams of Chugiak, Alaska; son, Mark Williams of Austin, Texas; mother, Trine Daniel of Seguin, Texas; sister, Gloria Saenz�

Outdoornews March 3, 2021 Biologists are concerned about monarch butterflies, which the U.S. Fish and Wildlife Service in December designated as a candidate for endangered or threatened status because of a sharp decline in recent decades. DALLAS As many people in the southern U.S. hosted neighbors who had no heat or water during the vicious February storm and deep freeze, Kate Rugroden provided a refuge for shell-shocked bats. Starving and disoriented, the winged mammals tumbled to the snow-coated ground as temperatures plunged to levels rarely seen in the region. “They burned through their energy reserves as they tried to wake up and get away from the cold and ice,” said Rugroden, of Arlington, Texas, one of numerous rehabilitation specialists nursing stranded bats plucked up by sympathetic people. “And there aren’t any insects out there for them to eat yet.“
