We all not a bit of chocolate a way and we have got dementia and also Sarah and now Dinesh even aprons are a chocolate shop in Georgia I have indeed Sara we're going out with Dinesh when he set up the shop I was there was the thing that swayed you even thought oh no that's a lie but it's not true so yeah I mean it could be I was surprised I mean that it's a really cool job to have a as a boyfriend just say to keeping you had something lovely every day and you know really how amazing notice when did you set up your shop is quite a new one isn't saying yeah we opened in September to at the end of September and so something really new it was it was kind of something that came up in Dorking I always wanted a shop in Dorking to so close to where we were based in Brooklyn so it's really great and a unit came up it was like the perfect opportunity to me Want to let it go so yeah we start started to kind of put plans together and it's come together enough sleep and then say you've had really good feedback now tell us a little bit about the chocolate the yes everything we make. For a program called growing great coca sustainable chocolate say we can track straight down to plantation. And the reason we do that is basically to we don't use fair trade or anything like that it's more of us need to organization and that chocolate is to kind of promote more small farmers and producers of cocoa in smaller kind of countries like Tanzania Ghana Ivory Coast where they can't just rely on cocoa crop they need to rely on kind of fruit trees and things as well so they need extra education so Chocolat is from Belgium and France who basically provide them the education they need through our program and then I basically am broken into 13 different flavors and then we sell them in Brooklyn then we sell them in broken metal workshops and also set it dork in our shop now so we do the workshops to actually get people to come and make their own bars over the weekends when we're not making chocolate so how much fun is that yes so you can do work you can do a chocolate bar one troublemaking you can even book it for like Christmas parties or birthday party say that goes down really well I think you need to sleep yeah yeah we've had a crazy weekend this weekend it's been really busy and it's been kind of finishing off part how much fun and also what great present for some crazy and those people by is about to. Shop as well or online say so where did your love of chocolate and it all kind of started on a school trip to a chocolate factory so I 1st went to a chocolate factory and took away one of these home making kits and I thought this would be a cool thing to do at home and then made some chocolates at his home making chocolate and sold them for charity and then it all kind of sprung up from there and how when I 1st started I was 10 I really so it's been it's been a long time and then I went off to university in a kind of gave things up and it was kind of some vegetable like I kind of put so much time and effort into it and so now we've created Coco Island which is paradise to come in Enjoy yourself make chocolates yourself and then at the shop you can also enjoy cocktails on weekends as well oh my goodness it just gets better and yeah what better paradise. That's. Help out in the shop I do sometimes yeah. Of course quality could yes everything goes fast that there is definitely. Different flavors of Yeah yeah so we've got whiskey caramel cappuccino chili Lemon in gin milk white dark code explosion which is an award winning chocolate so we've done quite a few awards for that one I can hear my daughter. Really well but you know the whole range and more to come hopefully soon say that sounds so was it fun coming up with a different flavor it is yeah it's really fun and obviously we're always kind of looking to do new flavors but yes it is really fun it's great seeing people work kind of at the shop we offer samples and people tasting it and seeing their reactions it's great like their love for it and especially the chili one it's kind of an aftertaste that people kind of have it and it's a milk chocolate so it's like are there's no chili in that and then suddenly take another hit and it's like a massive shock you know someone's already had like 2 or 3 pieces and it's like oh my god no burning so what's the most sort of standout popular one of the Christmas code explosion by far is always been the most popular but chili has proven to be popular and caramel there are 2 new kind of upcoming ones that everyone starting to kind of her contact has I think acid and chocolate is suddenly kind of in the last year or so really kind of boom the need to stray I think everyone's looking for a nice chocolates I mean it's locally made something that supports sustainability that they can and that's so important yet and they're looking at it's not just like buying a bar of chocolate off the shelf they're actually looking at the ingredients and that's what's important to us is basically making a bar that sustainable. And delivering great kind of taste qualities for using to. It will come up well I am afraid the police have a say with step. My supper club guess the c evening we have Dinesh and we have Sarah they have from Cake who Island chocolate shop. Now to gnash going to share a recipe with the. So hopefully a recipe that everyone can use as Christmas is coming and probably friends and families are coming round so we're going to share a truffle making recipe that can be used on offer to our chocolate bars as well so you can use our actual chocolates to make these truffles. And it's quite quite an easy recipe so once you get going with one of the bars you can try out across the rest of the 12 and before you know you have 1213 different flavored truffles so all it is is getting cream and boiling creams you can use longlife cream if you want the truffles to last longer or fresh cream but then they'll probably only last about a week k. So that's that's the top 10 then is yeah and there's also the other so the truffles are kind of measuring their water content as to how long they last so by boiling it you're he getting rid of all the the water content to minimizing that so it kind of extends the shelf life and actually in labs they would actually have that and test a sample of the going and it's a w. Value which is a water value of chocolate and depending on how high that is depends on how long the chocolate will last me say oh yes that's how you make the not to the life they want they. Are Going To Do you know they're going to go I'm a going to have to make. But we tend if you are making the most Christmas gifts the number you probably would want to go for the longer life yeah yeah probably the longer life long life cream and just below that and then simply get any of our chocolate bars so really works really well we try to the caramel one really nice camera filling it can make so just get the break up the bar as it is into a bow and then pour the heated cream over the chocolate bar and just whisk that in by hand you can use a electric whisk but it will go really hard really quickly as well so it's much better to just use it with a hand you ask you whisk it all in into a nice consistent liquid and then it will start to thicken as you keep whisking must it thicken just put the bone into the refrigerator. Refrigerant for about an hour. And take it out with a teaspoon just scrape out roll into a nice little ball and just make multiple balls of the filling and then you need to temper some chocolate sauce pick another bar so ideally on a caramel milk chocolate bar so our milk chocolate for 5434 percent and it's really nice to kind of finish it off because it's not too thick in fluidity So some chocolate cooking chocolate can also be really thick and it doesn't really truffles really well but. It's perfect to use for coating truffles and a good great tip to that to making sure they're not in a set really well is tempering the chocolate before you put it in put it on the truffles and it's really simple method and we show our workshops all the time and we get people making cakes in Millionaire shortbreads they say my chocolate always goes white and it just doesn't come out snappy or shiny and then I sell well how do you know to over hot water in a bowl and it's like the typical. Right here so here hopefully this little tip you can use across anything you using like a 1000000 shortbread brownies etc Well my award winning biscuit or you hold my own . I think they've all gone now. So yeah all you need to do is get 100 grand bar and just kind of save 2 lines of the bar melt the rest of it if using kind of a milk chocolate it's really important to get the temperatures right to get a thermometer to hand melt up to $45.00 degrees and if you using a dark amount up to 50 degrees and do it in really slow increment in the microwave so do it 30 seconds at a time and although it looks like it hasn't really melted it is doing so you can start to crystallize So just keep stirring it put it back in it's tedious but about 5 or 6 times later you have a nice fluid chocolate just check that the temperature is right and once it's out. Either 45 for milk or 50 for dark then add in those 2 little lines of chocolate that you left and just stir that in nice and gently Don't go too fast just keep staring. And that would temper it because that helps crystallize the chocolate also at the end you're looking for a shiny looking for a snap and if you're molding it you're looking for it to just fall out of the modern need to put upside down. So to do that you basically need to make sure that process happens slowly and gradually because want to crystallize it and to crystallize you need to cool it down from its optimum temperature which is 45 or 50 . September the chocolate in that way much better than using the bowl method and melting it or save the 2 lines add them in the later stage and once it's nice you'll feel it kind of go from liquid to thicken up a little bit and when it starts to thicken put your little balls of truffle it again ash that you've rolled out put them into the chocolate and just roll them out really gently in your hand with the chocolate nice to messy get your hands covered in chocolate and just roll them all out and just kind of drop them on to grease proof paper. If the temp is tempered perfectly then they should just say room temperature within 5 to 10 minute and you need to put them in a fridge and you can actually just start eating them. Off Yeah yeah I know I did my time just decorated with like some cocoa powder or something to just dust on top of the chocolate still setting and then just watch it and then enjoy and serve to your friends and family how brilliant So you started making talk at the age of 10 when did you discover this microwave tip very early on actually when I realized my 1st batch did not come out of the mode and I realized I had put it over hot water and I did not follow the instructions as I like to do especially when you get eye care fact that you don't reuse discard the instructions so I kind of did that with this home making kit as are it's just easier and it's just that it wasn't there is a technique behind it. And as people that come on our course realize they go home and they send in pictures of things they've made after and they're like oh my god it's like this is simple trick. And in Belgium it was crazy because when I was actually doing my training there's multiple ways of doing the tempering process. And in Belgium they use marble surfaces and they pour out a band Marine worth of like 5 kilos go out onto the table and give you 2 scrapers and say temporary Oh my goodness and it's don't care about the monitors there it's all about I and looking at it and just seeing that yes didn't see and you can see it start to crystallize I can just see myself sliding along the marble just. Just to see only on that sliding off the surface and I want to terrify here today really good fun and it really does start once you start working it so much you realise kind of when it's tempered and when it's a good consistency. But yeah if anyone at home is going to try out our truffles and use all 13 bars they will be Masters by the end of it I know that's already in it's got to I think some Christmas presents anyone this thing in my. A great idea but such of the things if you're going to visit people yeah. Yeah I mean I say I made so I might try. To eat them on the way that was just. By his ear it makes. You. Was. Together we kind of we kind of have an idea for a little get out for the main meal but you know we could be the starter and then the dessert is well liked and I tried and as I would imagine. People would be disappointed if you didn't say what you'll start to be a typical starter probably brush better with like mozzarella tomato cubes like pieces you know I think yeah we love. That you can't I mean and also. Start you know and I don't know if I'm being by what we both love Italian food as well. So I definitely that as a starter Yeah I think and then what would you go in for the main course we love so our idea for a main bringing everyone together with make your own pieces so what do you think we have this really cool contraption that you pop on the barbecue and you make your own pieces and then put them in the wood fire on the off sorry on the barbecue and yeah so if one's popping their own toppings or whatever they were and then the best part is if it goes wrong you blame you so you blame the 1st minute. So they're making their own do as well normally we've done that before yeah it's just the toppings make it easy for them and they can't really go wrong to top it right I want to see a contraption that like for the buffet you know it's amazing it's not so much like a little 10. Underneath. It's very very hot I mean you put the pizza in and takes about a couple of minutes. That stranger assistant can see be making them every day and I just don't want to go it is not to burn Yeah. So what sort of toppings to leave out for people to pick from so many. I mean I love meat so like the how or the pepperoni the salami. But then we have like him better Terry and it will he have the capability as well you know. All of that so we never really used to like olives and then it kind of just grew upon us one day I think we both when we 1st met we never we hated olives and would go to an Italian and they would always bring out a plate of olives and I would just read just to sit there and not eat the olives so you kind of just kept picking away at one if you like if you ate one Ali one and now we just we just eat it we've got over a period of time is the same I used to absolutely hate them and then it was the 1st time I went to Greece I thought I can't go to Greece and not eat all they've said before I went I practiced eating them I make myself like them and now I'm a massive fan absolutely love to like them yeah I mean Dad did step it up a notch at Christmas last year and brought these like olives filled with cheese and chili and all of these things as I can we're now I'm out. Here just play dollars. And there's so many different ones he could have and then I'll even talk let me try that haven't I think there's something in that they have olive oil and olives he never met. Never tried that. The chili chocolate in a chili con carne. Chili took. In Dorking they they there was this competition going around and you had to make each shop had to make something or recipe something with using their product and another product in the local area and the butcher shop you made a venison sausage with Archie chocolate oh wow did you get to taste it I did. Because they only they told me they went and bought a chocolate bar from the shop and I didn't know they had done it and they did it all and then they entered in for an award and it won an award and that's when I found out that they'd use my chocolate in the sausage Well I think you can take credit for that yeah it was apparently really nice and I heard I saw the reviews on their Facebook pages of everyone saying that sausages How can you put chocolate sauce to every loved it and not combination I'd have naturally come up with and believe me I put chocolate It may think. You could even make chocolate pizzas he can safely Yeah so you still are safe we gave for this quite a while yeah like St Pete says there's quite a few I think there's quite a few festivals they have like those vans and cars where you can go and get like pizza slices can you like in a savory It's like sweet. And what you're putting. Own putting has to be a chocolate brown Yeah with ice cream. I either use my milk chocolate or the dark chocolate but. Mainly milk I'm more of a milk fan but we do have like some people that like the dark chocolate so yeah dark chocolate milk chocolate chocolate brownie so with ice cream. Recipe field around well it is just like doing a base you do it in the same way as a normal Brownie just don't use the cocoa powder so you know to Chung instead. Down our chocolate bars and put that into the brownie instead of putting like chocolate powder or anything in so it just makes it so much more richer and like soft and so you know and then you have that with the hot chocolate. It's more for the truffles or those shuffles that they come out after the brownie you know I mean they see them they spot them from my membership was a gone before the time that's like the start of May.
