Sung. A. Song. Live. Along the way Morning a mixtape b.b.c. Radio Leicester promise that you'll never find another. And told. Me. Never find another like me. In. To. Make the cut on the fun in the. Mail thank you and. A eloquent. Thanks. So much like a o. L was. Shot was. Cut cut cut. Cut cut cut cut cut cut cut on the front. Thank you. down on the view that. Actually it is made to morning makes. The b.b.c. Radio. Mid-morning go to past 10 until midday today only quarter had to go until all special looking at drinks for Christmas. Things to buy good offers all that kind of stuff we'll talk about that in about quarter of a mass time we'll be talking beer wine spirits all kind of stuff you can get it calls news well if you want a natural There are some questions you know that kind of thing Oh wait oh wait 101 I for one last week we were talking Christmas crafts making presents and so on the next week we're talking food that's what we're doing anyway in the run up to Christmas it's quarter past 10 bring in the weather which is I mean so in the city at the moment the sun is out or we are expecting it to be not bad until mid to late afternoon when there are thunderstorms forecast but working today without bringing a weather update in the next quarter an hour or so here on b.b.c. Radio that's a 1st of all the last week you may well remember we had some award winning wreaths in the studio when I say award winning I mean the award winning wreath but he's on the front door of Number 10 Downing Street no doubt that scene will be seen a lot in the next few days we'll look behind the podium and the wreath behind was made in Leicestershire Anyway I went out to the Christmas tree farm where it was created hello and they used to have your I mean we're freezing Christmas tree farm this is more than a Christmas tree farm if I may so this is a winter wonderland Yeah it's all about the experience so the question is not just going to pick a tree have a rock they can come walk through about a 200 meter war into the plantations which is just a magical experiences just trying to try to get the kids are so light of where the smallest search when I was a child my grandfather used to go to the wood yard Newtown Linford and it was a shed and we drive up we pick a tree and we drive was lashed to the top of the car drive home again that's what used to be for years and years but increasingly it and I think to the benefit of all of us this kind of thing has become an event doesn't it so you know maybe bring the kids of the grandkids along when you make a bit of a deal of it yes so we are in the 1st of November for people to come out pretax then how families works that pretax so Prieto you. The families could. Any time for the 1st November they get the same experience walking out into the fields thanks every fare we've got find their perfect Christmas tree put a tag on it with a name and a security number so the track to that tree shouldn't go missing and then they come back at a later date when it's convenient for them to base a good experience again but the trade is we've all been to a Christmas plantation and you you go you spend hours looking for a tree because we're all perfections when it comes to trees I'm the one and you go up to this result so that's what the pretty talking about isn't it yeah that's what a pretty tag is about but because we've got such a wide selection of trees are where the U.K.'s largest Piero farm. People probably don't not fun the perfect tray that there's so many trees that they're out there for them to look at here we call again tree blindness because they're looking at thousands and thousands of trees in my experience it's usually the 1st when you saw that you come back to look at me go and so it is actually blowing a proper gale out here and I want people to hear this so you know you know you have had a bit of a battle this year so it's a gale at the moment which is snapping trees you've had water up to the only bowls which must make the land really soggy and difficult to work with yeah it's incredibly ways been the hardest year so far I can ever remember and certainly one of the hardest of my dad and then just. Wet and when you get way you get muddy and trees get dirty that. Just yeah it demoralizing for you guys I mean as well I mean looking at your. Buddies that you've got here they're all absolutely clattered up to the eyeballs and it's just hard isn't it yeah I can take if you like say. This is really curious all my friends for my good job when these are the storm Ok couple of doors will mostly windscreen Yeah that's the study hall on the house that I'm going to. Now yes and we live in them every day of the year so it's. a team of us 16 from the tree tryst he's involved my best friends. And their got a team and they soley Orsola have them in to look after our trees now yeah I'm asked to make sure that we get back classic shape of a conical because if you look in front of me or tell me that they're about the 1st representation of a Christmas tree I think the Illustrated London post of Queen Victoria Prince Albert and you look at the tree in it was actually almost like a conical Chub with very you know standard branches but we've become that we have a star the top and it gets bigger the bottom yet is set up with a normal that's a norm which I want less is the non-drug Yeah as much as to us want yes only so $11.00 person will probably make about between $10.00 to $20.00 cuts on the tree every year just to try and keep that that shape and then a Norway spruce they're shaped with about a 2 foot long knife and the guys go around that they can probably do a trade about 15 seconds. So you know you me and you could literally just cut a finger Yeah yeah so that's I mean you know it's a cotton involved process you don't just stick it in the ground and come back 10 years later knows your tree oh I wish I wish it was a no no not so yes so as soon as we're finished harvest now. So in January we'll start getting all the pre-merger spray so that's trying to stop all the wheat rice and then made a pro you get in 1st losses on for the trees to start growing they only grow for roughly a 6 week period every year and then when they growing through. The end of May June he can see on every tree the leader. Every tree has to be done between $2.00 and $4.00 times with rollers chemical to slow the lead growth it's trying to surely get a dense conical tree. For example turn out like that one a very leggy tree from to us when you see I was looking at one from enough because everybody's perfect tree as we was talking about only one is different because my wife was able to keep we put in the sitting room because I had to keep a chair in there we have been able to see because our tree is quite bushy but we fit into a wall yeah that would be ideal for Yeah and that's exactly where we're now streamlining it so thin tall for example with the plants that we buy this Danish plants called us for aunts which grow quite fast and I thin until and we're now going instead of having these real heavy thick 6 foot by 4 foot watch raise to 6 for by 3 foot watch trees and so now what we're doing is adapting that in the plants that we start using. Do you love them I mean. You'll either go to where you either have new Christmas trees in your own home or you'll have 10 which way you go I don't have a say on it my wife says oh oh. I love Christmas. And I love it for the concept that. Everyone small as ever was halfway through the whole atmosphere of what we're trying to make is just it's come to knowing years hard work and a lot now just that the farm where we are is just yes great I was enjoying so so happy you can't be miserable when someone else isn't when to shut up shop 2037 yeah yeah we use a clock and to me yeah we servant on the 24th and of God and family now my brothers got a young family but I was going to be older and yeah yeah i would you know when you were young because we start with the Christmas trees in the last week of September and not up to this point now I think between me my brother Sam and one of the same managers that would probably between us have 4 days off so now we're looking forward to the world is a very short Christmas when you start replanting. You can replant in the spring in a city plan on the year so when you plant in the spring if it comes to draw you can get bad losses so we only plan in the autumn but get a can get everything prepped ready for the autumn planted this year failed because of how wet This year's been we should have put in. Or should put her in probably another 50000 and I couldn't. Be traitorous is my best friend he's probably sure of about 60000 trees that he can prance we had to call trenching so used to come in like you would in a garden if you buy bare rooted plants entrance them in the hole yes a Toms put 60000 in trenches I was very fortunate where I could cancel my 15000 saying it delivered or if they had been delivered then. Put it on the bonfire. It's a tough old thing which of I mean I speak to so many farmers about 70 different forms of farming and this year has been the toughest that many of them can ever remember but longshot you speak to any farmer now what James Baxter who's local to to worse he should probably have 600 to 800 acres of wheat road I think he's probably got more than 100 done so far. We're not too bad because of how our season is where we planted for agriculture and farming this year this will be the the wettest harvest year that I think that we have to recommend and you can see why our trucks is just a quagmire everywhere as many everywhere every saturated is just. Well I wouldn't hold your breath. For having a Christmas dinner as I'm looking to talk Christmas trees we need to raise a. Few to go the way we lost you guys. Your Way Through all this Clark. Beautiful stuff for us yeah yeah that's the main it's no one else's fault the trees are muddy other than our own so it's just yeah what should have been quite a simple task is now turned into a very hard task because of the way in the mood for Christmas thank you so. Amazing . And we're going to catch up with him for next year and go through the whole process of what they do on the farm just amazing stuff and honestly the conditions they are contending with just a riff. Producing beautiful stuff and the right look if you listen to b.b.c. News headlines on the way. This is Paul Young. Drink sour coming out Christie drinks of course but come every minute or 2 1st of all it's the headlines. See. Radio Leicester. So with. And finally. Doctors have just arrived it will have a chat to them in a minute it's 20 minutes to 11 if you don't have a natural things to buy for Christmas think it is a cool 101 I for one let's check out what the weather has got in store for us today with Good Morning it's staying off the drive through the rest of this morning with clouding up a bit more as we head through. Softening and a few showers likely to arrive through the afternoon periods are dotted around 3 today temperatures will get up to about 6 or 7 so you feeling a bit chilly with a slight breeze around and as we go into tonight will it become dry and quite clear but with those clay skies some come some pretty low temperatures could see below freezing through tonight so it is going to be a chilly and frosty start as we go through tomorrow morning maybe bright speaking with that cloud building once again and then we've got some system rain likely to arrive as we go through lunchtime and the rest this afternoon through to the evening could also be quite heavy at temperatures maybe a degree higher but it's still going to be feeding she of course with that rain around and maybe some breezy conditions it's not great feeling too pleasant so the wind is going to strengthen as we go through Friday with a chance of seeing a few more outbreaks of rain and whilst it is looking blustery across this weekend it is looking mostly drawing through Saturday and Sunday we'll talk mostly to realize we're right there well that's the weather for you it's 20 minutes to 11 time for b.b.c. Introducing track of the week this is we spoke to marching on the show yesterday lovely guy Joe Come a little this is always. The Joke on a little and always just a beautiful piece of music he sort of stepped away from music industry for a while and then the year or so ago just felt that he was missing something and that's what he come up with he's just great and where they go it's it's certainly minutes to 11 just after Duncan Marie Hello Season's Greetings How are you just today we're talking about drinks because usually we talk about gardens and so on in this hour but we thought we'd we'd have a chat about drinks this week we did crafts last week drinks this week food the next Duncombe rewinds Market Harborough. How are you all are I'm pretty good actually it's like chicken in the throat but then I've got some booze with me so that you can sort it out Connie so we thought that we're going to chance to read as well from the brewery but he's just out there in the. Green Room as it were of a studio and this is really about getting most bang for your buck with stuff that will taste great over Christmas time and matching up with Turkey and vegetarian options what kind of stuff. What have you brought in I brought a white a red and a port style wine so you know if you're having turkey for Christmas it's a dry meat if you have saved your block with it it just really doesn't work it's that they can't just together I kind of give you it's almost like if you would have been here in cornflakes that the Dish really wouldn't work under is going. So I've got something. It's a shot and I from northern Spain but made like white Berkeley Now the minute you say showed a lot of people will. Know it tastes like chewing Oh yeah yeah and the and the reason people have gone off Chardonnay is because well I say if you go back 30 years when you were shot. They 1st hit our shores they were made in barrels the prices have gone up massively in comparison to duty and people aren't using barrels for the vast majority of supermarket ones there's it's like an inmate in a large stainless steel tank with a huge great teabag affair with chips which is dunked in the wine so you end up with these big blousy. I don't like you not something I do yeah yeah but the vast majority of people being put off shard and I and they think all sharp knives like that but shabbily is Chardonnay and so people say I don't like sharp knife but I like shabbily when Schwinn Sharda is done well it's one of the finest wines in the world and white burgundy which is one of the perfect things to drink at Christmas is delicious However it's expensive and you can get things which taste like it for less like this Yeah Ok So talk me through what those sorts of. Goodness is like for Christmas and so this one is it's called Nino min model which apparently translates a spoiled brat which made me laugh to start with I love it and so this this is for men to do in oak barrels so when you smell this you're getting the that waft evoke there's a nice kind of buttery nursed to it nice citrusy flavors to it but it's not what you can see actually and it's difficult on radio but in the we can see in the color it doesn't look like right it's like it's not heavy you know some of the really heavily oak stuff is quite it's really dark yellow we describe it looking like an early morning sample and this one really is. So so and you can always tell a well made wine doesn't have that huge part of color to it so the smell is really delicious on the taste. As I was a nice tropical fruit to it citrusy it's really nice an apple there's a smooth this is still dry refreshing and this but there's a richness to the fruit which will balance really really nicely with Turkey So how do people find so if they can't find that particular make and brand because I'm not a Market Harborough there are a lot of many of us in the u.k. That have this one actually but what would they be looking for if you went to the supermarket or to your local I mean there are many wine merchants about either but if you went by looking for this what would you look for Mr a lot of just look for. Smaller producers less big brand that that's the key less kind of a big brand or or supermarket label go for something which is a bit it's difficult to say but. Me But You. Give us a ring and I'll tell you yeah that might be but something that looks a bit different maybe that doesn't look so heavily branded Yeah something that maybe says a note on the bow on the a note is good and I just don't buy a big brand much is that I mean this one is $1549.00 it's not astronomically expensive but it's not cheap either but at a similar taste from Burgundy would cost you a 20 quid or more so you're getting more bang for your buck but you could you could go down a price bracket and still get something that's really like something in the shop which is an r. Note shard and I wear them with a another great cause and again you go it's dry but it's soft it's round and that what you want to go with Turkey if you're having a big bird is something which is soft still dry but there's a round as to that if you go for something which is so which is really green fruits it will just jar against it but I would go with the lovely vegetarian options world because it's got enough guts to go with something but it just as a nut roast can be quite dry as well counter that the richness of the wine to pair up with the dryness of the food always always think about what's what is the food I'm going to be having where What's that like and try to find something that's going to envelop it rather than get in the way of it going and of course at Christmas time if you can afford a little bit more you get more bang for your buck and it doesn't have to be a lot more a couple of quid will get you a better one than it is sometimes it's worth pushing the boat out a bit at Christmas definitely it's for a bottle that $899.00 or $199.00 it's exactly the same duty so you're getting much much more for your money and if you spend or merely 799 a bottle and you spend 99 or 1099 you can get so much more Wow So we always say drink drink drink better less drink less but drink better quality and you'll see the winds kind of slow you down you know you can't drink me quickly you're going to save them and well I was going to say that I actually drink much slower so you drink less anyway you know because it's you know it's thanks to the white. Can we go for red yet which for sure we have a little red which. A little number of the cheek a little bit of fruit if you ever said that to somebody boring ones at your show you a regular cheeky little. We come up with all the all the phrases that Clark and Judy Gordon used to use this is dark so this is dark this is a little wine from the Deep South of France hinterland something we import directly and it tastes like Coke or own Billard or it's got the same a Roman flavor as a mini shot enough to pop and and shutting off the pap is a great one for drinking at winter times but blindingly expensive Yeah yeah and you can get something which is just you know just over the fence or just down the road and it's just delicious Yes it's got the youth Yeah yeah that's Chewy not to tell me though that doesn't sort of suck your cheeks dry it's got lovely softly round it's like Christmas pudding you called me a Christmas but nobody you know what I mean yes. Off drive as well it's sort of yeah it is got lovely lush plummy black prairie blue brief lives to it there is ton in there but it's a nice balance I could bath in that I pay good money to watch. Something else completely. So what's the grape of that again so this one is Syria which people will know is sure as it's grown ash it's not a great great variety called Sun So a great radical move there there are but so they are there for varieties that you'll get in things like Shatner's to pap. Andrew from John Breaux is coming because he's feeling left out outside look we'll have a chat to him in a 2nd or 2 so again if you're going to look for this on the shelves what are you looking for something so the same Syria or sure as a watch oh I'm going I want to glass because what a bottle opener that's what he wants you know if you actually drank quite this early I don't know a single about 6 o'clock on a little bit hard near one of the sons over yonder somewhere. Quite. What should people be looking for than Syria or Shiraz because Shiraz gives you that the Australian antipathy. Are you sure as can be times really quite Jamey for me that sometimes overpowers food if you can have paired up so if you can look for Rome so Koda Rome. Longer dark is an area so deep in the south of France. These wines and the run all have used the same great varieties so there is Syria or Shiraz and Gore gnashed they're the 2 key ingredients and they come from areas with lots of sunshine you get a lovely right grapes and a nice richness of later because again it's a delicious I can see that going with the richness of Christmas food doesn't matter with that richness comes from a turkey or a bit of before how much really all that goes with with the vegetarian option mushrooms whatever that would go with it oh absolutely perfect I mean I think we don't go traditional til a Christmas where fondue but we do with this was a Christmas do Christmas Eastland we did sprouts into it and I think this Red be perfect that. I'm not going to write that down for you and sprouts that's a good there's a bit of bread as well but you get the Christmas you think have the sprouts as well . Only the. Looking into your sprouts. From John a brewery thank you very much indeed for coming in what have you what was the sound of you opening in the background just opening a couple of beers that we had produced for Christmas I think is probably Doug's alluded the the Christmas drinking market is an interesting market and one of things that always amazes me is how. All the major multiples reduce the price of a drink at a time when people want to have more drink there we are that's that's that's a different thing but people are always looking for beers to do with the season so in the summer they want a nice light beer and when it comes to the sort of more winter months and Christmas are the looking for something a bit more warming so we've got our our 3 kings which is a 4 and a half percent Ruby colored traditional premium bitter hasn't got any of the notes of cinnamon except that some of the beers have because we tend to find that whilst we like a mouthful or 2 of those beers we like people to have more than just a glass so we say w w w drink responsibly. We have we've also produced our night sky in bottle this year which is our 6 percent black i.p.a. Because if there's a time when I mean Duncan was talking about the drink less drink better and what we're finding is rather than drink 3 or 4 glasses of something that sort of 4 percent people are looking to trade up a bit in their strength and they're interested in the sort of deep porters and some of they like having a point of it yes exactly right there's a glass of it yes and so they'll do that and they tend not to be driving as much around Christmas time so look will toast them after the news of the 11th that's Ok Duncan just finishes off with the final bottle you brought in this is the this is the piece of resistance for the end of the meal I guess with this oh so tradition you would have thought. Whether it be Ruby port or Tony Porter I thought of bringing something a bit of a bit left field which is made like a Tony port and this is called Maverick Daphne of Patra So it's from Grease from southern Greece or you've got this the Peloponnese which is the large lump of land south of the current canal and this is from the northern part and it's maybe 2 great varieties and that's under return and it's 99 so we want to grow so it's a matter of Daphne which is which can be made into a dry wind but most commonly made into a sweet one and there's a great writer called Current the AQIM from Corinth So it's been around for several 1000 years which used to be made into Of sorts of Tanner's which was shipped to the u.k. . And it is a gorgeous little number and all of that sound. When you've probably heard before. Wow that is Tony isn't it so if you buy a ruby port is that really dark dark dark red isn't it yeah why jam a lovely delicious stuff 20 porters is 20 probably not aged small it's all around or Yeah so in a smaller barrel proportionately there is more pork in contact with the wood than in a large barrel because the wood breeds the color changes so your hair you've got this lovely Tony brown color is heaven of course and so just on its own would you like a mint plywood No he said not doing all possible over any one thing and you can look at it thank you very much I can see you made these yourself or made somebody else make them. That was lovely and sometimes ports a bit you know you have a glass or 2 that is really really sweet and it's a lovely thing but you know so if you buy a bottle of wine in a ruby 59699 supermarket for not much more you getting something that's made. Differently arguably I would not bet is the wrong word but it's just I mean this is delicious different but it doesn't it's not cloying it's love that there's a real nice balance to it this isn't a strong alcoholic port which is only 15 percent alcohol Westport is 20 and after 2 or 3 glasses of port it's good not Josephine isn't it you really know it's kicked in whereas a 15 percent or this is the about the same strength as the previous point we were tasting just a lovely balance it works very nicely with minced pies and the sources you purchase from some locally locally produced Stilton. Chilled down yes that's a red but it's chilled and anything and I think pork style if we if you serve it chilled it suppresses the feel of alcohol so if when you normally drink a port yes you get the burn in your throat if you drink it chilled you don't get that feeling so you get you get all the other night content know that so you chill it for for an hour or so in the fridge for treated exactly like a white wine really look put it in ice yeah you'll find it's slightly more dangerous because you think this is refreshing but it's just. Gorgeous. After 11 short of short appear on for a nice thing. For the winter. If you got a question for think it was a white 101 i Phone I muse on the white. John drown in Union of the snake it's beside the Les Abend joins me through until midnight it's funny how many people suddenly found a very important reason to be down near the studio the moment is heard from want to why that is look we'll continue to talk about Christmas drinks Christmas drinking as well after 11 o'clock will also be doing because we normally do the gardening out this time will be touching on a bit of God in those presents that we started to make in September final bit of what to do with those all to come in the next half an hour or so here on b.b.c.
